Nick Kennedy is a founder and Senior Executive Barback at Civil Liberties Bar. Since opening in 2014 Nick has been fascinated by the intersection of booze and people, weaving between the cognition of bartending through to the science of flavour and vacuum distillation.
Nick has given talks and seminars around the world on a variety of topics based heavily on those intersections as well as entrepreneurship and management philosophies. Some locations Nick has spoken at are (but not limited to) the following: Tales of the Cocktail, San Antonio Cocktail Week, London Cocktail Conference and The Toronto Cocktail Conference.
Nick and his partners have gone on to open Vit Beo, Third Place, Electric Bill, Civil Works, the popup series Sunday Speedway and Miracle on Bloor.
Nick then helped found Civil Pours, a vacuum distillation project attempting to democratize cocktails and where they can be served through both novel technology and reimagined ingredients. With a few more projects coming down the pipeline Nick is attempting to leave a little room in his schedule to get into the woods and into some trout.
