Microbrasserie, restaurant et bar à cocktails, le Projet Pilote est le premier établissement au Québec autorisé à posséder un alambic pour la production de ses propres spiritueux. L’exigence de qualité s’exprime à chaque étape : des vins rigoureusement sélectionnés aux spiritueux artisanaux, incluant des versions sans alcool, jusqu’aux pains fabriqués sur place. Chaque produit est conçu maison lorsque possible, avec une attention particulière portée aux détails. Le tout est servi dans un cadre soigné, propice aux rencontres et aux échanges.

Microbrewery, restaurant and cocktail bar all at once, Projet Pilote is the first establishment in Quebec authorized to have a still for the production of its own spirits. The strive for quality is expressed at each step: from the thoughtfully curated wine list to the house spirits, including non-alcoholic versions, all the way to the various breads baked on site. Every product is made in-house when possible with a careful eye on every detail. All of this happens in a proper setting that makes meetups and exchanges memorable.
